This special dish can come in small, bite-sized pieces wrapped in foil or paper. It can also be found as a larger sausage in sealed plastic. Nem chua has a unique sweet and sour taste, which comes from a process called lactic fermentation. It usually has a pretty pink color and a firm, bouncy texture.

In Vietnam, people often eat nem chua raw. It's a popular snack or side dish in many parts of Southeast Asia. It's known for its sour and spicy flavors. Nem chua can be enjoyed on its own or used as an ingredient in other dishes.

How Nem Chua is Made

Making nem chua starts with lean pork. The pork is pounded and mixed with cooked pork rind that has been cut into thin strips. Depending on where it's made, garlic, chili, or even a special plant leaf like chum ruot (also known as giremblier leaf) might be added.

After mixing, the nem chua is carefully wrapped to keep air out. This can be done with foil, aluminum foil, or plastic. Then, it's kept at room temperature. This warmth allows the fermentation process to begin. During fermentation, good bacteria help change the food, giving it its special taste and texture.

The longer nem chua ferments, the more sour it becomes. This sour version is called nem chua, which means "sour nem." If it ferments for a shorter time, it's less sour and is called nem ngọt, meaning "sweet nem."

Nem chua is quite popular in countries like France and Belgium. Many Vietnamese people live there, and they enjoy foods from their home country. You can often find nem chua in Asian grocery stores. It might be sold as small square packets wrapped in pink paper, often in packs of 10. Sometimes, it's sold as a larger sausage, weighing about 200 grams, in plastic.

When you buy nem chua, you might see two dates on the package. These dates tell you when the meat starts and finishes its special ripening process. People usually eat it between these two dates. It's often enjoyed as a snack before a meal, like an appetizer, and sometimes with beer. In some places, it's recommended to cook nem chua before eating it for safety.
