A Bread for Shepherds

The recipe for pane carasau is very old. It was created a long time ago for shepherds. Shepherds often stayed far from home for many months. Pane carasau was perfect for them because it can last for up to one year if kept dry. This meant they always had food with them. You can eat this bread dry, or you can make it soft by wetting it with water, wine, or sauces. There is also a similar bread called pane guttiau. It is made without yeast and has extra seasoning.

Ancient History

We know that pane carasau is very old because pieces of it have been found. Archeologists found remains of this bread in ancient stone buildings called nuraghes in Sardinia. This shows that people were eating pane carasau on the island even before 1000 BC!
