A paste is a yummy, small pastry from Hidalgo, a state in central Mexico. You can find them in nearby areas too. Pastes are filled with all sorts of delicious things. Some have potatoes and ground beef. Others are sweet, like apple, pineapple, or sweetened rice. You might even find them with traditional Mexican flavors like tinga or mole.
The idea for pastes came from the Cornish pasty. Miners and builders from Cornwall, United Kingdom, brought this tradition to Mexico. They came to work in the towns of Mineral del Monte (also called Real del Monte) and Pachuca in Hidalgo, starting in 1824.

What Makes a Paste Special?
Pastes are a lot like empanadas, but they have some key differences. The biggest one is how the filling is prepared.
Pastes vs. Empanadas
When making a paste, the ingredients inside are not cooked beforehand. They cook right inside the pastry as it bakes! For empanadas, the filling is usually cooked first.
Another difference is the dough. Pastes use a firm, thin layer of dough. Empanadas, on the other hand, often have a lighter, flaky dough with many layers.
