What is Princess Cake?
A princess cake is made of several layers. It starts with a light and airy sponge cake. On top of the sponge cake, there are layers of creamy pastry cream and a thick, dome-shaped layer of whipped cream. Sometimes, raspberry jam or fresh raspberries are also added between the layers.
The whole cake is then covered with a smooth layer of marzipan. This marzipan is usually green and gives the cake its unique rounded look. A little powdered sugar is often sprinkled on top.
History of the Princess Cake
The first recipe for this cake appeared in a cookbook in 1948. The book was called Prinsessornas kokbok, which means "The Princesses' Cookbook." It was written by Jenny Åkerström (1867-1957). She was a teacher to three Swedish princesses.
The princesses were the daughters of Prince Carl, Duke of Västergötland. They were Princess Margaretha, Princess Märtha, and Princess Astrid. They loved this cake so much!
Why it's Called Princess Cake
The cake was first called grön tårta, which means "green cake." But because the princesses enjoyed it so much, it was renamed prinsesstårta, or "princess cake."
Other Cake Colors
While the traditional princess cake is green, you might find other versions. If the cake has yellow marzipan, it is sometimes called prinstårta (prince cake). If it has red or pink marzipan, it might be called operatårta (opera cake).
