Qovurma is a delicious cooked dish from Azerbaijan. It is a type of stew that comes in many different kinds. All Qovurma dishes are made by slowly cooking meat with fruits, herbs, or vegetables.
Even though its name sounds a bit like "korma" (a dish from India), Qovurma is not related to it. Both names just happen to come from a very old word in Turkic languages.
What Does "Qovurma" Mean?
The word "qovurma" comes from an old Turkic word, qawirma. People first wrote down this word around the 1200s. It is thought that this word spread across different regions a long time ago.
How is Qovurma Made?
In Azerbaijan, "qovurma" refers to several similar dishes. Most of them start by frying meat in butter. They often include dried fruits to add flavor. Sometimes, cooks also use verjuice, which is sour grape juice, to make the dish taste even better.
You can find similar stews with fruit in a nearby country called Iran. There, they are known as khoresh.
Different Kinds of Qovurma
There are many types of Qovurma. Some popular ones include:
- Lamb Qovurma: This is a basic version made with lamb meat.
- Liver Qovurma: This type uses liver instead of other meats.
- Sabzi Qovurma: This is a lamb stew made with lots of green herbs. The word "sabzi" means "green" in Persian. This dish mixes cooking styles from both Persia and Turkic areas. You can eat Sabzi qovurma with plov (a rice dish) or by itself with yoghurt and crushed garlic.
- Turşu Qovurma: This dish combines lamb with preserved lemons and dried apricots. It gets its yellow color and special taste from turmeric.
- Nur Qovurma: This kind of Qovurma features lamb and pomegranate.
