Rocky Mountain Chocolate was started by Frank Crail and his friends Jim Hilton and Mark Lipinski. They opened their very first store on May 23, 1981. This store was on Main Avenue in Durango's Historic District, right next to the Durango and Silverton Narrow Gauge Railroad.

In 1982, Jim Hilton and Mark Lipinski left the business. Frank Crail then bought their shares. That same year, the company built a new factory in Durango. They also opened their first stores that were run by other people, called franchises. These first franchise stores were in Colorado Springs, Colorado and Park City, Utah.

In 2013, a big cereal company called Kellogg's worked with Rocky Mountain Chocolate. They made a special cereal together for a short time. This cereal had sweet corn flakes, almond slices, and chocolate pieces.

In 2022, a magazine called Newsweek named Rocky Mountain Chocolate as America's Best Chocolate and Candy Store. This was a great honor for the company!

In 2023, Rocky Mountain Chocolate sold off its frozen yogurt business. This part of the company was called U-Swirl, Inc.

In September 2023, Rocky Mountain Chocolate Factory announced a change to its name. They decided to remove the word "factory" and are now known simply as Rocky Mountain Chocolate.
