Sbrinz is a very hard cheese made in the middle part of Switzerland. People often use it instead of Parmesan cheese in Swiss cuisine, which is the way people cook in Switzerland.

This special cheese is only made in 42 dairies (places where milk products are made) in central Switzerland. They only use milk from cows that live in that area. The cheese stays in this region until it is ready to be eaten.

Some people think the name Sbrinz comes from a specific place. But this is not true. However, the Swiss Cheese Union created an advertisement in the 1990s that made it seem like there was a place called Sbrinz.

What Makes Sbrinz Special?

Sbrinz is an extra hard cheese with a lot of fat. About 40% to 45% of its dry weight is fat. The cheese needs to get older for at least 16 months before it can be sold as Sbrinz. Its full, rich taste only develops after about 24 to 30 months of aging.

A Look Back: Sbrinz History

Many people believe Sbrinz is the oldest cheese in Europe. The Celtic people, who were ancestors of the Swiss, were making cheese hundreds of years before Jesus was born. This old cheese might have been an early version of today's Sbrinz.

The official website for Sbrinz says the cheese was first mentioned in the year 70 AD. However, it does not give many details about this. Other sources say the cheese is mentioned in old agreements from around the year 1200. We are sure that it is mentioned in documents from 1530. These old papers are kept in the state archive in Bern, Switzerland.

Starting in 2001, Sbrinz received a special certification called appellation d'origine contrôlée (AOC). This certification sets rules for where the milk must come from and how the cheese must be made. This ensures that only cheese made in a specific way can be called Sbrinz. In 2013, the AOC was replaced by a new certification called appellation d'origine protégée (AOP).

How to Enjoy Sbrinz

Sbrinz can be eaten in a few different ways. You can grate it, just like you would put Parmesan cheese on pasta. It can also be eaten in small, broken pieces, often with wine. Another way to enjoy it is in thin slices, which are shaved off the hard cheese. Many people also like to eat Sbrinz simply with bread and butter.
