Sometimes, people add meat or seafood to it. If you like spicy food, some versions have extra hot labuyo chili peppers! Sinantolan comes from the Southern Luzon area of the Philippines. This includes places like Quezon, Laguna, and the Bicol areas. It is a type of ginataan, which means it's cooked with coconut milk.
What's in a Name?
The name Sinantolan (or sinantulan and santolan) means "made with santol." It's like saying "santol-ized"!
People also call it:
- Gulay na santol or gulayon na santol: This means "vegetable santol."
- Ginataang santol: This means "santol cooked in coconut milk."
- Giniling na santol: This means "ground santol."
How Sinantolan is Made
Making Sinantolan is a fun process! Here's how it's usually done:
- First, the santol fruit is peeled. The seeds are taken out.
- The fruit's skin (rind) is washed very well. Then, it's chopped or grated into tiny pieces.
- The grated santol rind is squeezed to remove some of its sour juice. This makes the dish less tart.
- Next, garlic and onion are cooked in a pan for a few minutes. If you want meat or seafood, it's added now and cooked too.
- The prepared santol rind is then put into the pan and cooked for a short time.
- After that, thick coconut cream (called kakang gata) is poured in. It's boiled until it's fully cooked and creamy.
- Finally, the dish is spiced up! Shrimp paste (bagoong alamang), siling haba chilies, salt, and pepper are added to taste.
- For those who love extra heat, tiny chopped labuyo chili peppers can be mixed in.
