You can eat Spressa delle Giudicarie when it's quite young, after about three months. But if you let it age for more than six months, it gets an even stronger flavor. This cheese is shaped like a cylinder, which is about 25 cm (9.8 in) wide. It has a brown crust on the outside. Inside, the cheese is white or a very light yellow. How Spressa Cheese is Made
This cheese is made from cow's milk. Farmers usually use milk from a special type of cow called the Rendena breed. They use milk from two different times: the evening milking and the morning milking.
Traditional Cheese Making
Long ago, farmers in the Giudicarie area had a clever way to make this cheese. First, they would use the cow's milk to make butter. Butter uses the fatty part of the milk. What was left over was called skimmed milk, which has less fat. Instead of wasting this skimmed milk, they used it to make Spressa delle Giudicarie cheese. This made sure nothing went to waste!
