Taiwan's tea traditions have been shaped by both Chinese and Western ideas. For example, the Gongfu tea ceremony is a very detailed way to make tea. People in Taiwan sometimes call it "laoren cha," which means "old man tea." This special way of making tea started in China and became very popular in Taiwan.

For a long time, people mostly focused on teas that came from just one specific farm or area. But in recent years, high-quality teas that mix different types together have become popular. Also, an old way of making tea called "xun tea" has made a comeback. This involves adding dried flower petals or parts of flowers to the tea to give it a lovely smell and taste.
