The Story of UFC: A Sweet and Spicy History
Banana ketchup became a popular and cheaper choice than tomato ketchup in the Philippines. This was because bananas were very easy to find there. A Filipino food scientist named Maria Y. Orosa (1893–1945) is known for creating the first banana ketchup recipe.
How Banana Ketchup Began
In 1938, Magdalo V. Francisco also created his own way to make ketchup from bananas. He started selling his banana ketchup in 1942. His brand was called Mafran, which combined parts of his first and last names. He officially registered Mafran as a brand name in the Philippines.
Starting the Universal Food Corporation
Later, Francisco asked Tirso T. Reyes for money to help his business grow. This led to the creation of the Universal Food Corporation in 1960. Jaime Datu Reyes was the first president of this new company. However, Francisco soon left the company due to disagreements.
After leaving, Francisco started his own new company, Jufran Food Industries. He then launched Jufran Banana Catsup. The name Jufran came from his son, Magdalo "Jun" Francisco Jr.
The Birth of UFC Tamis Anghang
In 1969, Universal Foods Corporation launched its own special product: UFC Tamis Anghang Banana Catsup. This ketchup had a unique recipe. It mixed the sweet taste that Filipinos love with a little bit of spice. That's why it was called tamis-anghang, which means "sweet-spicy" in the Tagalog language.
Changes in Ownership
In 1974, another company called Bancom Development Corporation bought Universal Foods Corporation. Later, in 1996, Southeast Asia Food, Inc. (SAFI) bought Universal Foods Corporation. SAFI is now known as NutriAsia. When SAFI bought Universal Foods, they also gained ownership of the Mafran and Jufran brands.
