How Xuanwei Ham is Made
The best Xuanwei ham is made from a special type of pig called the Wujin breed. These pigs are raised in the Xuanwei area. They are chosen because their meat and fat are perfect for making this ham.
To make Xuanwei ham, the fresh pig legs are salted three times. This helps to preserve the meat and give it flavor. After salting, the legs are hung in a special room. This room is well-ventilated, meaning it has good airflow. The ham stays there for 8 to 12 months. During this time, it slowly dries and develops its unique taste and texture.
Sometimes, certain types of mold and yeast grow on the ham during this drying process. These tiny living things can actually help change the flavor of the ham, making it even more delicious.
