Zviti (which means "z'fiti" or "sfiti") is a traditional and tasty vegetarian dish from Algeria. It comes from a city called Bou Saâda. Zviti is one of the most popular meals in the Ouled Naïl and Bou Saâda areas, much like another famous dish called chakhchoukha.

People also call Zviti "Slata Mahras." This name comes from the special tool used to make it: a big wooden mortar and pestle called a Mahras. This tool is not just for mixing; it's also used to serve the dish! Zviti is often enjoyed during special events and holiday celebrations.

Where Does Zviti Come From?

Zviti first came from the city of Bou Saâda in Algeria. But it's not just found there! This delicious dish is also very popular in other places like M'sila and small towns such as Rommana, El Allig, Eddis, and Oultem. You can find Zviti enjoyed by people all over Algeria.

How Is Zviti Made?

Making Zviti is a fun process! It starts with a special Algerian bread called Reqass bread or Kesra. This bread is made from wheat flour and doesn't use yeast, so it's flat and firm.

Here's how it's prepared:

  • First, pieces of the Reqass bread are broken up.
  • Next, fresh tomatoes and garlic are crushed together in the Mahras (the wooden mortar).
  • Then, the crushed bread pieces are added to this hot tomato and garlic mix.
  • Many different spices are added to give Zviti its unique flavor. These include chili for a little kick, black pepper, and a special spice mix called ras el hanout.
  • Coriander, water, and olive oil are also mixed in.
  • In some areas, especially around Bou Saâda, green olives are added to the dish for extra taste.

All these ingredients are mixed and crushed together in the Mahras, which helps to blend the flavors and create the perfect texture for Zviti.
