Aisy cendré facts for kids
Aisy cendré (pronounced "Ay-zee sahn-DRAY") is a special French cheese. It's made from cow's milk by a company in Époisses, a town in the Burgundy region of France. This cheese gets its name from Aisy-sous-Thil, a nearby town.
This cheese has a unique "washed rind", which means its outside is regularly cleaned while it ripens. Aisy cendré contains at least 50% fat and usually weighs about 230 grams. It's about 110 mm wide and 35 mm tall.

What Makes Aisy Cendré Special?
The inside of the cheese, called the paste, has a slightly smoky smell. As it ripens, it becomes soft, but people often eat it while it's still a bit firm.
How Aisy Cendré Gets Its Look
The cheese is refined for two weeks. During this time, its rind is scrubbed. After this, it's rolled in wood ash, which gives it its special greyish color.
Production and Reputation
In 1991, about 7 tonnes of Aisy cendré were made. Even though it's made differently from other cheeses from Époisses, it benefits from the town's famous cheese-making skills.
