What Makes Arzúa-Ulloa Cheese Special?
This cheese is known for being soft and creamy. It can be made from raw milk or milk that has been pasteurized (heated to kill germs). It needs to age for at least six days before it's ready.
Look and Feel
Arzúa-Ulloa cheese usually has a round, disc-like shape with gently rounded edges. Its rind (the outer skin) is thin and flexible. The rind is a shiny, clean yellow color, sometimes medium or dark. Inside, the cheese is a uniform color, ranging from white to a pale yellow. It feels soft and smooth, without any big cracks. You might see a few tiny holes or bubbles inside, which is normal.
Taste and Smell
When you taste Arzúa-Ulloa cheese, it's usually a little sweet and has a fresh, grassy flavor. It's often compared to another Galician cheese called Tetilla. While they taste similar, Arzúa-Ulloa is different because of its soft rind and its disc shape. Tetilla cheese, on the other hand, is shaped like a breast.

Farm-Made Arzúa-Ulloa
This type is called Arzúa-Ulloa de Granxa in Spanish. The special thing about this cheese is that all the milk used to make it comes from cows on the same farm. This helps give it a very consistent quality, though its other features are similar to the regular Arzúa-Ulloa cheese.
Aged Arzúa-Ulloa
This version is known as Arzúa-Ulloa curado. It means the cheese has been aged for at least six months. Because it ages longer, it becomes much firmer in texture. This aging process gives it a stronger flavor and a more solid feel compared to the softer, younger cheese.
