Balyk is a special type of fish snack. It's made from the soft, meaty parts of large, valuable fish like sturgeon or salmon. To make balyk, the fish is first salted (preserved with salt) and then dried.
The word "balyk" comes from Turkic languages, where it simply means "fish." For example, in Turkish, it's written as balık.
What is Balyk?
Over time, the word "balyk" also started to mean smoked fish. This is especially true for fish that has been "cold smoked." Cold smoking is a way of preserving food using smoke at low temperatures. You might hear about "cold smoked hucho balyk," which is a type of large trout.
Interestingly, in Russia, some meat products are now also called "balyk" if they are cold smoked.
