How Was It Made?

Historians and brewers have studied how bappir was likely made. First, they mixed malted barley, barley flour, honey, spices, and water. Then, they baked this mixture until it was very hard. This hard bread could be kept for a long time without going bad.

When it was time to make beer, the bappir was crumbled into small pieces. These pieces were mixed with water, more malt, and either dates or honey. This mixture was then left to ferment for a few days. Fermentation is a natural process where tiny living things (like yeast) turn sugars into alcohol and gas. The result was a slightly sweet drink. People probably drank this flat (without bubbles) using a straw, much like how yerba mate is drunk today.

Bappir's Main Purpose
