The Sweet History of Biscuits Fossier

The tradition of baking in the city of Reims started a very long time ago, around 1430. Around 1690, bakers in the Champagne region came up with a clever idea. After baking bread, they used the warm oven to make a sweet snack. This is how the "bis-cuit" (which means "twice-baked") of Reims was born.

The company we know as Biscuits Fossier officially started in 1756, during the time of King Louis XV. Their special biscuits were even served at the coronation of King Louis XVI in Reims in 1775! Later, the company became a special supplier of biscuits to the King. In 1825, King Charles X gave them a special award for their high-quality biscuits.

In 1845, a baker named Mousier Fossier took over the main biscuit factory in Reims. He helped the company grow and make many different kinds of biscuits. Today, Biscuits Fossier has over 100 employees who work hard to make these tasty treats.

Towards the end of the 1900s, the company faced some tough times. However, in 1996, Charles de Fougeroux bought the company. He helped it get back on track and even moved it to a new, bigger building outside the city center. He also worked to bring back "old products that had been forgotten," like their delicious gingerbread.

In 2020, a group called Galapagos Gourmet bought a part of Biscuits Fossier. By April 2021, Galapagos Gourmet had fully bought Biscuits Fossier.
