A Sweet History in Reims
The city of Reims has a long history of baking, going all the way back to 1430. Around 1690, bakers in the Champagne region came up with a clever idea. After baking bread, their ovens were still warm. They used this warmth to create a special sweet treat. This is how the "bis-cuit" (meaning "twice-baked") of Reims was born.
The company we know today as Biscuits Fossier started in 1756, during the time of Louis XV, a French king. Their tasty biscuits were even served at the Coronation of Louis XVI in Reims in 1775! Because their biscuits were so good, the company became a special supplier to the King. In 1825, they even received an official award from King Charles X, recognizing the high quality of their biscuits.
In 1845, a baker named Mousier Fossier took over this important biscuit company in Reims. He eventually took charge of making most of the main types of biscuits in the city. Today, Biscuits Fossier employs over 100 people, all working to make these wonderful biscuits and sweets.
Facing Challenges and New Beginnings
Towards the end of the 1900s, the company, which had about twenty employees, faced some big challenges. It had financial difficulties and needed a lot of help. In 1996, a person named Charles de Fougeroux, who had already been helping the company for two years, bought the oldest biscuit factory in France and brought them together.
The company moved outside the city center and built new buildings. This big move helped them grow. Charles de Fougeroux also focused on bringing back "old products that had been forgotten," like their delicious gingerbread.
In 2020, another company called Galapagos Gourmet from the Breton group invested in Biscuits Fossier, helping it continue its sweet journey.
