Brem is a special traditional food from Indonesia. It can be a solid snack or a liquid drink. Brem is made through a process called fermentation. This means tiny living things like yeast help change the ingredients.
There are two main kinds of brem. One is a solid brem cake. People usually eat this as a snack. It comes from places like Madiun and Wonogiri. The other kind is a liquid brem drink. This drink is made from rice wine. It is mostly known from Bali and the Nusa Tenggara region. Brem first appeared in Java around the year 1000. We know this from old Javanese writings.
The liquid brem drink is used in special ways. In Hinduism ceremonies called Tetabuhan, it is an important offering. It is offered to a spirit called Buto Kala. This is done to bring peace and balance. Liquid brem can be white or red. The color depends on the type of glutinous rice used. It can taste sweet or a little sour.
Brem cake is made in Wonogiri and Madiun. Many Indonesian people believe this brem is good for their health. They think it helps their circulatory system. It is also thought to help prevent skin problems like dermatitis. This might be because it has good B vitamins. These vitamins are made by the tiny living things used in the fermentation process. Brem cake is eaten as a snack, not as a main meal.

Making Liquid Brem
Liquid brem starts with black or white glutinous rice. This rice is known as Ketan. First, the rice is soaked in water and then drained. After that, it is steamed for about an hour. Then, the steamed rice is cooled down.
Next, a special dry starter called Ragi tape is added to the cool rice. This starter helps the rice starch turn into sugar. A sweet, honey-like syrup forms at the bottom. After about three days, a special culture is added. This starts a process that changes the sugars. This process usually takes about two weeks.
