Brossat is a type of fresh, soft cheese. It is also called brull in some areas. This cheese comes from Catalan cuisine, which is popular in parts of Spain.

Brossat is special because it's made from whey. Whey is the liquid left over after making other cheeses. It can come from sheep or goat milk.

To make brossat, the whey is heated almost to boiling. This makes tiny bits of milk protein float to the top. These white, fluffy bits are then collected. Brossat is not pressed, salted, or aged. It's simply shaped using molds or cloths.

This cheese is a healthy choice! It has very little fat, usually around 10%. It is also packed with lots of protein, which is good for your body.

Where Does the Name Come From?

The name brossat is used in places like the Pyrenees mountains, Menorca, and Mallorca.

In other areas, like the mountains near the Ebro River and in Alt Maestrat, it is known as brull. This type of brull is often used to fill tasty pastries called flaós from the town of Morella.
