The very first Bush's Chicken restaurant opened in 1996. It was started by a person named Keith Bush. He opened it in Waco, Texas.

Over the years, the company grew bigger. In 2005, a group called Hammock Partners, L.L.C. bought the chain. The main office moved to Austin that year. Later, in 2015, the company had another change in ownership. The main office then moved back to Waco.

At one point, the restaurant faced a challenge related to a customer's claim. However, investigations showed that Bush's Chicken was not at fault.
