What Kinds of Cheese Does Corleggy Make?
Corleggy makes several types of cheese. They have two kinds of goat's cheese. They also make one type of sheep's cheese. Plus, they have five kinds of cow's cheese. These cow's cheeses are sold under the name "Drumlin." The animals that give the milk graze on farms nearby. These farms are located on drumlin pastures. Drumlin pastures are hills shaped like upside-down spoons. They are found along the River Erne.
The goat's cheese is made from milk that has been pasteurised. This means the milk was heated to kill germs. The cow's cheese is made with raw milk. This milk has not been heated. Corleggy uses vegetarian rennet. Rennet is something that helps milk turn into cheese. For some cheeses, they use seawater to wash the cheese. This helps create the edible rind, which is the outside part you can eat.
Corleggy Goat Cheese
