The Story of Falukorv
The history of Falukorv goes back a long time. It started in the 16th and 17th centuries. This was at the Falun copper mine in Sweden. Oxen were used to pull up copper ore from the mine. Their hides were used to make strong ropes.
After the oxen were used, some of their meat was left over. People learned to salt and smoke this meat. They then used it to make sausages. This was a smart way to use all parts of the animal.
Later, in the late 1800s, a butcher named Anders Olsson helped bring this tradition back. He created the modern Falukorv. This version uses a mix of pork and beef. Thanks to him, Falukorv became the tasty sausage we know today.

To be called Falukorv, a sausage must follow strict rules. For example, only potato flour can be used to bind the ingredients together. Also, at least 45% of the sausage must be meat. Many brands of Falukorv actually have much more meat than that. This special status helps protect the traditional recipe.
What is Middagskorv?
Because of the TSG rules, manufacturers cannot call other types of sausages "Falukorv." So, they use the name middagskorv. This means "dinner sausage." Middagskorv can be made with different ingredients. For example, some have less fat. Others might be made from chicken. There are even vegetarian versions. These are often made from soy, pea, or potato protein.
