Gajak (also called gachak) is a yummy, dry sweet treat from north-central India. It's made mostly from sesame seeds (also known as til) or peanuts. These are mixed with a special kind of unrefined sugar called jaggery. This sweet is cooked into thin layers that can be kept fresh for many months.
How Gajak is Made
Gajak is prepared using sesame seeds and jaggery. Making this sweet takes a lot of time and effort. It usually takes about 10 to 15 hours to prepare a batch of 5 to 8 kilograms of gajaks. The mixture is carefully hammered. This hammering helps break down the sesame seeds, releasing their natural oils. This process makes the gajak smooth and gives it a special taste.
