What is Ginataang Hipon?
Ginataang hipon is one of the easier ginataan dishes to make. It's simple but full of flavor.
Ingredients You Need
The main ingredients for this dish are:
- Shrimp (usually with their shells and heads still on)
- Rich coconut milk
- Onion
- Garlic
- Ginger or turmeric (a yellow spice)
- Patis (which is a salty fish sauce) or bagoong alamang (a savory shrimp paste)
- Salt and pepper to taste
How It's Cooked
First, the cook will lightly fry the onion and garlic in a pan with a little oil. Then, the shrimp are added to the pan. After that, all the other ingredients are mixed in. Everything cooks together until the shrimp are perfectly done.
Some people like to cook the coconut milk until it gets thicker and a bit oily. This makes the dish richer. Others prefer to keep it more like a soup. If they can get it, cooks often use thick coconut cream instead of thinner coconut milk for an even creamier taste.
Even though it usually doesn't have vegetables, some recipes might add a few. These could be leafy greens, bamboo shoots (called labong), tomatoes, or even cucumber.
Other Yummy Versions
Ginataang hipon can also be made with other types of seafood. These variations are just as delicious!
Ginataang Curacha
If you use spanner crabs instead of shrimp, the dish is called ginataang curacha. Spanner crabs are known for their sweet meat. A very famous version of this is called curacha Alavar.
Ginataang Sugpo
When the dish is made with bigger prawns or even lobsters, it's known as ginataang sugpo. These larger shellfish make the dish feel extra special and fancy.
