Graviera (Greek: γραβιέρα) is a popular cheese from Greece. It is made in different parts of Greece. The main places where it is produced are Crete, Lesbos, Naxos, and Amfilochia. Graviera cheese looks and tastes a bit like Gruyère. Gruyère is a famous Swiss cheese. The name "graviera" actually comes from the name "Gruyère".
Graviera is the second most popular cheese in Greece. Only feta cheese is more popular. Graviera is a hard cheese. It is shaped into large wheels. The outside of the cheese (the rind) has a special crisscross pattern. This pattern comes from the cloth used to drain the cheese.

Different Kinds of Graviera Cheese

Graviera of Crete
Graviera from Crete is made from sheep's milk. It needs to ripen for at least five months. This type of Graviera has a slightly sweet taste. It also has a nice flavor that reminds people of burnt caramel.
Graviera of Naxos
In contrast, Graviera from Naxos is mostly made from cow's milk. It uses about 80% to 100% cow's milk. This gives it a different taste and texture compared to the Cretan version.
