Making Great Cheese: The Story of Jasper Hill Farm
Brothers Andy and Mateo Kehler bought their farm in 1999. It was already known as "the Jasper Hill farm" because of a previous owner. They started selling their own delicious cheeses under the Jasper Hill Farm name in 2003.
That same year, a famous company called Cabot Creamery asked Jasper Hill to work together. They wanted to age a special kind of cheddar cheese with a natural rind, wrapped in cloth. This cheese became super popular and is now known as Cabot Clothbound Cheddar. It even won a big award in 2006, being named "Best of Show" at the American Cheese Society conference!
Because of how successful Cabot Clothbound was, the Kehler brothers decided to build something even bigger: the Cellars at Jasper Hill. This huge, 22,000 square foot building was built right into the hillside of their farm. It opened in 2008. The Cellars is like a special cave where cheeses from Jasper Hill Farm and four other local cheesemakers from Vermont and New Hampshire are aged. The Cellars also helps these smaller cheesemakers sell and distribute their products. This makes it easier for them to share their amazing cheeses with more people. Cheeses from the Cellars are sold across the United States, and some are even sent to Europe, Canada, and Australia!
Jasper Hill Farm is part of important cheese groups like the Specialist Cheesemakers Association, the American Cheese Society, and the Vermont Cheese Council.
Since 2013, Jasper Hill has also been teaching people how to make cheese! They offer beginner and intermediate classes with Sterling College in Craftsbury, Vermont.
In 2013, one of their cheeses, Winnimere, won "Best of Show" at the annual American Cheese Society conference. This is a very big deal in the cheese world!
A super exciting moment happened in February 2014. Their Bayley Hazen Blue cheese was served at a special dinner at the White House for the French President, François Hollande. Imagine your cheese being served to a president!
Later in 2014, at the World Cheese Awards, Bayley Hazen Blue won a "Super Gold" award. It was even chosen as one of the top 16 cheeses out of over 2,600 entries from 33 different countries. It was also named the "World’s Best Unpasteurized Cheese."
