Jean-Marie Josselin is a famous chef known for helping create a special style of cooking called Hawaii regional cuisine. He even wrote a cookbook called A Taste of Hawaii.
Chef Josselin's Beginnings
Jean-Marie Josselin was born in Chamonix, France. When he was young, he learned about cooking at a local restaurant. He then moved to Paris to become a trained chef. He studied at a special cooking school called the Lycee Hotelier de Paris. He also worked at a restaurant named Montorgueuil. Later, an American businessman asked him to come cook in the United States.
Jean-Marie Josselin's Culinary Journey
Chef Josselin started working in St. Louis, Missouri, in 1982. He then moved to different restaurants across the country. In 1985, he moved to Hawaii. There, he began to create new dishes. These dishes mixed the cooking styles of Hawaii's many different cultures.
In 1990, Josselin opened his first restaurant in Kapaa, Kauai. He opened several more restaurants after that. At one point, he sold all his restaurants and took a break from cooking. But by 2015, he was back! He opened three new restaurants in Kauai. He also opened another restaurant in Las Vegas.
