Jeow Bong or Jaew Bong (Lao: ແຈ່ວບອງ, Thai: แจ่วบອງ) is a special chili paste from Laos. It's a mix of sweet and spicy flavors. This tasty dip comes from a city called Luang Prabang in Laos.
People make Jeow Bong with sun-dried chilies, a root called galangal, garlic, and fish sauce. These are common ingredients in Laos. But what makes Jeow Bong unique is that it also has shredded water buffalo or pork skin in it!
How to Enjoy Jeow Bong
Jeow Bong is usually eaten as a dip. People often use it with Lao sticky rice. You can also dip raw or lightly cooked vegetables into it.
It's also a popular topping for a Lao snack called Kaipen. Kaipen is made from riverweed, which is like a plant that grows in rivers.
Jeow Bong is great because it lasts a long time. It doesn't spoil easily, so you can keep it for a while. The taste can be a bit different depending on who makes it. Some versions are spicier, while others are sweeter. But usually, it has both a sweet and a spicy kick!
