Becoming a Chef
Justin Devillier moved to New Orleans in 2003. He started working in different restaurant kitchens, including Bacco, Stella, and Peristyle. While at Peristyle, he worked with Chef Anne Kearney. He learned how to cook French food and how to prepare special meat dishes.
Working at La Petite Grocery
In June 2004, Justin joined the team at La Petite Grocery, a well-known restaurant. By October 2005, he became a sous chef. A sous chef is like a second-in-command in the kitchen.
After Hurricane Katrina hit in 2005, Justin played a big part in helping La Petite Grocery reopen. He helped manage the daily menu and taught new cooks. In February 2007, he became the Executive Chef, which means he was in charge of the whole kitchen.
