Kadyos, manok, kag ubad is a yummy Filipino chicken soup or stew. People often call it KMU for short. This dish comes from the Western Visayas islands in the Philippines. It is a special food of the Hiligaynon people.

The name of the dish tells you its three main ingredients. Kadyos means pigeon peas. Manok means chicken. And ubad means banana pith.

What Makes KMU Special?

KMU is known for its unique purple color. This color comes from the pigeon peas used in the soup. It is served hot, often as a main meal.

The Main Ingredients

  • Kadyos (Pigeon Peas): These are small beans that give the soup its special color. They also add a unique flavor.
  • Manok (Chicken): Chicken pieces are cooked until they are tender. They soak up all the delicious flavors of the soup.
  • Ubad (Banana Pith): This is the soft, inner part of the banana plant stem. It adds a nice texture to the dish. Don't confuse it with ubod, which is heart of palm.

Other Flavors

Besides the main three, KMU also has other tasty ingredients. These include fresh onions and fragrant lemongrass. Thinly sliced ginger adds a warm, spicy kick. Sometimes, a mild green pepper called siling haba is added. Salt and pepper are used to season the soup perfectly.

KMU and KBL: What's the Difference?

KMU is similar to another popular Hiligaynon dish called Kadyos, baboy, kag langka, or KBL. Both dishes use kadyos (pigeon peas). However, there are some key differences.

KBL uses pork (baboy) and jackfruit (langka). It also has a sour taste from a special fruit called batuan. KMU, on the other hand, uses chicken and banana pith. It does not have the sour taste that KBL has. Both dishes are loved for their rich flavors and unique ingredients.
