Kamameshi is a yummy Japanese rice dish. Its name means "kettle rice." It is cooked in a special iron pot called a kama.
Long ago, people shared kamameshi right from the kama pot. Families or friends would eat together from the same pot. This way of eating became popular after the big 1923 Great Kantō earthquake. It was a way for people to share food and feel connected.
Over time, kamameshi changed. It became a type of Japanese pilaf. This means rice cooked with different ingredients. Chefs add meats, seafood, and vegetables. They also use tasty flavors like soy sauce, sake (rice wine), or mirin (sweet rice wine).
A special thing about kamameshi is the rice at the bottom. When cooked in the iron pot, it gets a little bit crispy and slightly burned. This adds a delicious flavor that many people love.
As kamameshi became very popular, special kama pots were made just for this dish. These pots are often brought right to your table. You can also find smaller kama pots for single servings. Today, kamameshi is a famous ekiben. An ekiben is a special meal box sold at train stations in Japan.
Other countries in East Asia have similar rice dishes. In China, it is called guō fàn or bo zai fan. In Korea, a similar dish is dolsot bibimbap. These dishes also cook rice in a pot, often a clay or stone bowl.
