A Sudanese woman prepares kisra.

Kisra (sometimes spelled kissra) is a popular thin, fermented bread. It is eaten in countries like Chad, Sudan, and South Sudan. Kisra is usually made from a type of grain called durra, also known as sorghum, or sometimes from wheat.

There are two main kinds of kisra. One is called kisra rhaheeefa. This is a very thin, baked sheet of bread, much like a injera (another type of flatbread). The other kind is a thicker porridge, known as kisra aseeda or aceda. People often eat kisra aseeda with a tasty meat and vegetable stew, which is called mullah.

About Kisra

Kisra is a very important food in Sudan. In 1995, people in Sudan ate a huge amount of sorghum flour each year to make kisra. They used about 20,000 to 30,000 short tons of sorghum flour annually. This shows how much people rely on kisra as a main part of their meals.
