This process helps to separate the alcohol from the water in the cider, making a much stronger liquid.

How is Lambig Made?

Making Lambig is a careful process that has been done for a long time in Brittany.

  • Cider Making: It all starts with apples, usually special kinds grown in Brittany. These apples are crushed and pressed to get their juice. This juice is then left to ferment, turning into cider.
  • Distillation: The cider is then heated in a special pot called a still. When the cider heats up, the alcohol turns into a vapor (like steam) before the water does. This vapor is collected and cooled, turning back into a liquid. This liquid is much stronger and is called eau de vie, which means "water of life."
  • Aging in Oak Barrels: After distillation, the clear eau de vie is put into wooden barrels, usually made of oak. It must stay in these barrels for at least two years. This aging process is very important because it gives Lambig its golden color, smooth taste, and special flavors from the wood. The longer it ages, the smoother and more complex its flavor becomes.

This means that for a drink to be called Lambig, it must be made in a specific way, in the Brittany region, and follow strict rules, like being aged for at least two years in oak barrels. This helps make sure that every bottle of Lambig meets high standards.
