Lao sausage, also known as Laotian sausage or sai oua, is a super popular type of sausage from Laos. It's made from pork that's chopped up and mixed with lots of yummy spices. These spices include lemongrass, galangal, kaffir lime leaves, shallots, cilantro, chili peppers, garlic, salt, sticky rice, and fish sauce.

Sai oua is a special name for this sausage. It literally means "stuffed intestine" in the Lao language. This spicy sausage first came from Luang Prabang, a city in Laos. Luang Prabang used to be the royal capital of an old kingdom called Lan Xang (which existed from 1353 to 1707). Many people think Luang Prabang is the birthplace of Lao culture and its amazing food.

He was a special chef and master of ceremonies for the king of Laos. His handwritten recipes were put into a book for the first time in 1981. Sai Oua Kwai (Water Buffalo Sausage)

This type of sai oua is made with water buffalo meat instead of pork. The name sai oua kwai means "stuffed water buffalo sausage." It's another delicious way to enjoy this traditional dish.
