Lobio (Georgian: ლობიო) is a super tasty and traditional dish from the country of Georgia. It's mainly made from different kinds of beans, which are cooked or stewed. This yummy dish also includes ingredients like coriander, walnuts, garlic, and onion. You can find many types of lobio, some served hot and others cold!
The History of Lobio
Lobio is believed to have first been made in Georgia. While bean dishes might be very old, the most popular kind of lobio today uses red kidney beans. These beans originally came from the Americas and arrived in Georgia after the year 1500.
Like many Georgian foods, lobio often has a spicy flavor. But "spicy" doesn't always mean super hot! Some traditional lobio recipes don't even use hot peppers. Instead, they get their spice from ingredients like ground black pepper.
How Lobio is Made
There are many ways to prepare lobio. One very common way is to make a cold dish called lobio nigozit. This version usually uses dark red kidney beans. The beans are cooked and then mashed.
After mashing, other ingredients are added. These include garlic, onions, walnuts, coriander, marigold petals, chili pepper, and vinegar. This mix is then left to sit overnight. This helps all the flavors blend together perfectly!
Hot Lobio Dishes
A hot version of lobio is often made with white beans. In some hot recipes, meat might also be added to the dish. To make it, beans are put in a pot with water and spices. They are left to soak overnight.
The next day, the pot is placed over a fire or in a small oven. The beans are cooked slowly until they are tender. At the right time, meat and other vegetables are added to cook along with the beans. Once ready, the hot lobio is often served in a special clay pot with flat bread.
Over time, lobio became a standard recipe. The exact ingredients might change a little depending on which part of Georgia it is cooked in.
