Lübeck Marzipan (German: Lübecker Marzipan) is a very special type of marzipan. It comes from the city of Lübeck in northern Germany. This delicious treat has been protected by a special rule since 1996. It is called a "Protected Geographical Indication" (PGI). This means only marzipan made in Lübeck, following strict rules, can be called Lübeck Marzipan.

The rules for Lübeck Marzipan are stricter than for regular marzipan. They are set by a German quality group. To be called Lübeck Marzipan, it must have no more than 30% sugar. For "Lübeck Fine Marzipan," it can have only up to 10% sugar.

Some marzipan makers in Lübeck, like Niederegger, Carstens, Lubeca, and Marzipan-Land, make their marzipan even better. They follow their own extra quality rules. For example, Niederegger uses 100% almond paste and no added sugar in some of its products.

History of Lübeck Marzipan

Marzipan has been made in Central Europe since the Middle Ages. Back then, it usually had a lot of sugar and only a little bit of almond. This was because almonds were hard to get. They had to be brought in from other places.
