Mas huni (Dhivehi: މަސްހުނި) is a very popular Maldivian breakfast dish. It is made from tuna, onion, coconut, and chili. All these ingredients are chopped into tiny pieces. Then, they are mixed together with grated coconut meat. People usually eat Mas huni with freshly baked flatbread called roshi. This bread is similar to Indian chapati. They also often drink sweetened hot tea with it.
How is Mas Huni Made?
The fish used in Mas huni was traditionally a special kind of dried tuna called valhoamas. However, today many Maldivians use canned tuna because it is easier to find and prepare.
Different Ingredients for Mas Huni
In the past, when fish was hard to get, people would add chopped leaves to the Mas huni mixture. This helped to make the meal bigger and still tasty. They used green leaves from local plants and trees. Some of these included diguthiyara (Senna occidentalis), kuḷhafilaa or gōramfau (Launaea sarmentosa), mābulhā (Abutilon theophrasti), muranga (Moringa oleifera), massāgu (Amaranthus spinosus or Amaranthus viridis), sweet potato (Ipomoea batatas), and ḷos (Pisonia grandis). These leaves would replace some of the fish.
Today, a common way to make Mas huni is with kopee leaves. These are also known as Collard Greens.
Other Tasty Versions
Another version of Mas huni is made with muranga pods (from the Moringa oleifera tree). Instead of the leaves, the pods are boiled first. Then, the soft inside flesh and seeds are scooped out. This is then mixed with the other ingredients.
You can also make this thicker type of Mas huni with boiled butternut squash or pumpkin. These vegetables add a sweet and creamy texture to the dish.
