Maximus/Minimus was a very cool food truck that served yummy food in Seattle, Washington. It started in June 2009. Kurt Beecher Dammeier created and owned the truck. Colin Reedy designed the truck to look like a pig! It even had shiny metal parts that looked like a pig's snout and ears.

The Maximus/Minimus truck often parked in downtown Seattle. You could also find it at fun festivals and local farmer's markets. Sadly, Maximus/Minimus announced in April 2017 that it would not be opening anymore.

What Was on the Menu?

The Maximus/Minimus truck offered tasty pork dishes. A popular item was the pulled pork sandwich. They also had chicken and vegetarian sandwiches. Other sides included creamy macaroni and cheese, a soup called pozole, and fresh coleslaw.

The dishes came in two main styles:

  • Maximus: This style used a bold and spicy sauce. It was made with peppers, onion, fruit juice, and beer.
  • Minimus: This style had a milder, sweeter sauce. It was made with tamarind, molasses, and honey.

The truck used special cheese from Beecher's Handmade Cheese. This is a famous cheese shop in Seattle's Pike Place Market. Kurt Beecher Dammeier, who owned the food truck, also started Beecher's Handmade Cheese.

Fresh and Local Ingredients

Maximus/Minimus was proud to use fresh ingredients. All their foods were locally sourced. This means they came from farms and suppliers nearby. Everything was also natural, with no artificial stuff.

Some people thought the truck's food was barbecue. But Kurt Beecher Dammeier said it wasn't. He explained that the amazing flavor came from the special sauces they used, not from traditional barbecue cooking.
