Peremech (say: peh-reh-MECH) is a delicious fried pastry, a bit like a savory doughnut! It's very popular in the Tatarstan and Bashkortostan regions of Russia. People make it from dough, and it's usually filled with tasty ground meat and chopped onions. Sometimes, you might find it with potato or a soft cheese called quark inside instead.

What is Peremech?

Peremech is a small, individual-sized pastry. It's a traditional food from the Volga Tatar and Bashkir cuisines. It can be made with two kinds of dough:

  • Dough that doesn't rise (unleavened dough).
  • Dough that rises (leavened dough), like bread dough.

The most common filling is ground meat mixed with chopped onion. In the past, people used cooked meat. But now, raw ground meat is more common.

How is it Shaped?

Peremech usually looks like a flat, round pastry. It has a special "window" or opening in the middle. This opening doesn't go all the way through, like a doughnut hole. Instead, it's just a dip on top, so you can see the yummy filling inside!

The dough around this opening is carefully folded and pressed. This gives the classic peremech its unique and pretty shape. It looks a bit like a Russian pastry called a vatrushka.

How to Enjoy Peremech

Peremech is best served warm or hot. People traditionally eat it with:

  • Broth (a clear soup).
  • Qatiq (a type of yogurt).
  • Ayran (a salty yogurt drink).

Peremech Around the World

The meat-filled version of peremech is very popular across Russia and other countries that used to be part of the Soviet Union. In these places, it's often called belyash (say: bel-YASH). The word "belyash" became common in Russian in the second half of the 20th century. It might come from another Tatar word, bəleş, which is a big baked pie with meat and potato.

Modern belyashi sometimes don't have the hole in the top. Along with pirozhki and chiburekki, belyashi are a common street food. You can often buy them from street vendors.

Peremech in Finland

In Finland, this pastry is known as pärämätsi. It first appeared in the city of Tampere in the 1960s.
