Special Types of Rupjmaize
One special kind of Rupjmaize is called Salinātā rudzu rupjmaize. This version of the bread is sweeter. It gets its sweetness from a special process. Hot water is poured over some of the rye flour during preparation.
In 2013, Salinātā rudzu rupjmaize received a special award in the European Union. It was registered as a Traditional Speciality Guaranteed. This means its traditional recipe and way of making it are protected.
