Sabrina went to a classical high school called Liceo Clasico Orazio in Rome. After trying to get into a film school called Centro Sperimentale di Cinematografia, she started her acting career in small roles in movies during the late 1980s.

On June 24, 2001, she celebrated the championship win for her favorite football team, AS Roma, by performing a dance at Circus Maximus in front of thousands of fans.

Sabrina also acted in several Italian Christmas comedy films, often called "cinepanettoni." She once said she was happy to be part of these films because she loves traditional Italian holiday treats.

In 2008, she appeared in another film by Paolo Virzì, Your Whole Life Ahead of You, and won another Silver Ribbon award. In 2013, she became a judge on the popular talent show Friends of Maria De Filippi.
