Samlar kako (Khmer: សម្លកកូរ) is a very special and traditional soup from Cambodia. Many people even consider it one of Cambodia's national dishes! This means it's a super important part of their food culture.
Samlar kako is packed with flavor and healthy ingredients. It usually has a special paste called green kroeung, a fermented fish paste called prahok, and roasted ground rice. It also includes tasty ingredients like catfish, pork, or chicken, along with lots of different vegetables, fruits, and herbs.
What makes Samlar kako extra cool is that it can be a complete meal all by itself. It's often called a "one-pot dish" because it has everything you need for a balanced meal in one bowl. If you prefer, it can even be made as a vegetarian dish. In this version, the fish and meat are left out and replaced with creamy coconut cream and vegetable broth.
