Samsø is a special cheese from Denmark. It is made from cow's milk. This cheese gets its name from the Danish island of Samsø.
It was first made a long time ago, in the 1870s. Back then, the King of Denmark wanted to learn how to make great cheese. So, he invited expert cheesemakers from Switzerland to come and teach their skills. That's how Samsø cheese was born!
Samsø cheese is a bit like Emmentaler cheese, but it has a milder taste. When it's young, it tastes gentle and a little nutty. As it gets older, its flavor becomes stronger. It can even have sweet and sour notes.
Inside, Samsø cheese is soft and stretchy. It is a bright yellow color. You will also see a few large, uneven holes in it. The outside of the cheese has a golden-yellow rind. This rind is usually covered with a yellow wax to protect the cheese.
