The Story of Scialatelli
Scialatelli is quite new compared to many other Italian pasta shapes. Most pasta types are very old! An Italian chef named Enrico Cosentino created Scialatelli. He came up with the idea in the late 1960s.
Chef Cosentino was working in a restaurant in his hometown of Amalfi. His new pasta shape became famous in 1978. That year, he won a special prize at an international cooking competition.
What's in a Name?
The name Scialatiello (which is the singular form of Scialatielli) might come from a local Italian word. It could be from the Neapolitan word scigliatiello. This word means "to ruffle."
So, "Scialatelli" might mean "ruffled" pasta. This makes sense because the pasta strips look a bit ruffled. They have a slightly uneven shape after being cut by hand.
Another idea for the name is that it comes from two Neapolitan words. These are scialà (meaning "to enjoy") and tiella (meaning "pan"). However, this idea is probably not the true origin of the name.
