What is a Sfoglina?

The tradition of the sfoglina comes from the Emilia-Romagna region in Italy. In local dialects, a sfoglina is also called “azdora” or “zdoura”. The city of Bologna is especially famous for this art. Many years ago, housewives in Bologna would say you knew you made good pasta if you could see the Sanctuary of the Madonna di San Luca through it when held up to the light!

The sfoglina tradition is very old, going back centuries. Almost every family in Emilia-Romagna used to have someone who made fresh pasta at home. Even today, making homemade fresh pasta is still very popular. While most sfoglinas work at home, some also work in restaurants and trattorias. They truly represent the amazing cooking art of Emilia-Romagna.

How Sfoglinas Work

Sfoglinas usually make their fresh pasta in a small, simple workspace. While they are busy rolling dough, they often wear a white uniform with an apron. Many sfoglinas enjoy listening to Italian songs as they work.

There is a strong sense of community in these pasta-making spaces. They create a feeling of traditional Italian home life. This helps make sure the pasta is truly authentic and special. Sfoglinas are also linked to holidays and Sunday family meals. On these days, women often come together to prepare food for everyone. This community spirit is even seen in fun pasta-making contests, like the famous “Miss Tagliatella” competition.

Making the Sfoglina Job Official

The job of a sfoglina does not have official rules or regulations in Italy. Some people believe this is because it has traditionally been seen as a woman's job. They feel it has not been given the same importance as other professions.

In 2004, a former member of the Italian Parliament, Franco Grillini, tried to change this. He suggested creating a group to protect the Emilia-Romagna sfoglia tradition. He also wanted to make official rules for sfoglinas and even for men who do this work, called "sfoglinos." Grillini wanted to show that this craft was important and respected. However, his idea was not approved.

Another attempt to create rules for sfoglinas happened in 2017. Senator Sergio Lo Giudice suggested training courses and official recognition for sfoglinas and sfoglinos. His proposal was also not accepted.

Promoting the Sfoglina Art

Many people are working to promote the sfoglina's craft. They want to encourage people to enjoy local, traditional, and sustainable foods. One important effort is the VSB, which stands for “Vecchia Scuola Bolognese” (Old Bolognese School).

VSB is a special place in Bologna dedicated to food culture. It is known as the home of sfoglinas, led by a sfoglina named Alessandra Spinsi. The school offers many classes for both beginners and experienced cooks. Here, people can learn how to make traditional Italian pasta and keep this amazing art alive.
