The Story of Tagliatelle
There's a fun story about how tagliatelle might have been invented. People used to say that a clever chef created it in 1487. He was supposedly inspired by the beautiful hairstyle of Lucrezia d'Este. This was for her wedding to Annibale II Bentivoglio.
However, this story is actually a joke! A humorist named Augusto Majani made it up in 1931. So, while it's a nice tale, it's not true.
In the past, a recipe called tagliolini di pasta e sugo, alla maniera di Zafiran was served on fancy silver plates. Over time, tagliatelle became a more common and loved food for everyone.
To show the perfect size of this pasta, there's a special gold replica. It's kept in a glass case at the Bologna Chamber of Commerce. This replica shows that cooked tagliatelle should be about 8 millimeters wide. When it's uncooked, it's a bit narrower, around 6.5 to 7 millimeters, depending on how firm the dough is.
