Sinampalukan, also known as sinampalukang manók or tamarind chicken, is a yummy Filipino chicken soup. It has chicken cooked in a sour broth. The main sour taste comes from tamarind fruit and its leaves. Other ingredients include ginger, onion, and garlic.
What's in the Name?
The word sinampalukan comes from the Tagalog word sampalok. Sampalok means "tamarind". So, sinampalukan literally means "cooked with tamarind".
How Sinampalukan is Made
To make sinampalukan, cooks first lightly fry chicken with garlic, ginger, and onions. Then, they add water along with tamarind pulp and young tamarind leaves. Sometimes, spicy siling haba or labuyo chilies and tomatoes are also added.
You can also add other vegetables if you like. These might include green beans, pechay (a type of cabbage), regular cabbage, or eggplant. Sinampalukan is usually served hot over white rice. Many people see it as a comfort food. It's often given to people who are sick or enjoyed on cold days.
Sinampalukan vs. Sinigang
Sinampalukan is very similar to another Filipino soup called sinigang. Some people even think it's just a type of sinigang. However, there's a big difference! Sinampalukan always uses tamarind leaves as a main ingredient. It also only uses tamarind to make it sour. Sinigang, on the other hand, can use many different sour fruits to get its taste.
