Smoked cheese is a type of cheese that has been treated with smoke. This process gives the cheese a special flavor and a yellowish-brown outer layer. It's a bit like how some meats are smoked to preserve them and add taste.

How Cheese Gets Its Smoky Flavor
Cheese can be smoked in a few ways. The two main methods are cold-smoking and hot-smoking.
Cold-Smoking Cheese
Cold-smoking uses cool smoke, usually between 20°C and 30°C (68°F to 86°F). The smoke adds flavor without cooking the cheese. This method can take a long time, sometimes up to a month, depending on the type of cheese.
Hot-Smoking Cheese
Hot-smoking uses warmer smoke, from 40°C to 90°C (104°F to 194°F). This method not only adds flavor but also partly or fully cooks the cheese.
Using Artificial Smoke
Some less expensive cheeses get their smoky taste in a different way. They use special liquid smoke flavoring and food coloring. This makes them taste and look like they were smoked using the traditional methods.
Types of Smoked Cheese
Many different kinds of cheese are smoked. Some popular smoked cheeses you might find include smoked Gruyère, smoked Gouda (also called rookkaas), Provolone, Rauchkäse, Scamorza, Sulguni, Oscypek, Fynsk rygeost, and smoked Cheddar.
