Tavče gravče (Macedonian: Тавче-гравче) is a yummy traditional dish from North Macedonia. It's made with fresh beans and is super popular there. You can find it in many restaurants! How to Make Tavče Gravče
Making Tavče Gravče takes a little time, but it's worth it! Here's how it's usually prepared:
Preparing the Beans
First, the beans are cleaned. Then, they are soaked in cold water. It's best to let them soak overnight. If you're in a hurry, a few hours will do, until they become soft.
After soaking, you must throw away the old water. Add fresh water to the beans. Slowly bring them to a boil. Then, let them simmer in a covered pot on very low heat for about an hour.
After this first boil, drain the water again. Wash the beans well. Add even more fresh water for a second boil. Changing the water helps make the beans easier to digest.
Cooking the Ingredients
While the beans are boiling, a whole onion is added to the pot. Once the beans are cooked, the boiled onion is taken out. It's then fried separately with a little flour and a spoonful of ground red paprika. After frying, the onion mix goes back into the boiled beans.
You can add salt, black pepper, or a special seasoning salt called Vegeta to the soup. Some cooks also like to add dried meats. This could be smoked pork, bacon, or a type of dried meat called suho meso.
Baking in the Clay Pot
Once the beans are boiled and all the ingredients are mixed, they are put into a special earthenware pot. This pot has a lid. The pot then goes into an oven to bake at 220 °C (about 425 °F).
It's important to check the beans often while they are baking. You need to make sure they don't get too dry. The traditional clay pot makes the dish look nice when served hot. It also helps keep the food warm. If used regularly, it can even add a special flavor to the dish!
